I think rice pudding is one of the first things I learnt to make as a kid. It is one of the old school favourites, like prawn cocktails and cheese balls, that would have been expected at a dinner party in the 1970s. But you don’t see it much these days. It has been replaced with deconstructed this and reconstructed that. But the classics are great because they knew what they were doing. The flavours work and if you are looking for a warm and comforting desert then rice pudding is your go to gal!

It is such a simple and satisfying desert and so great for kids. Aside from a bit of stirring there isn’t really much you need to do. I like a glossy, creamy, sweet rice pudding and here it is, my kid-friendly easy as rice pudding recipe.

Rice pudding

Serves 1-2 (perfect for 2 kids)

1/4 cup basmati rice
1 1/4 cup milk
1/4 cup sultanas1/4 tsp vanilla extract

Add the rice, milk and vanilla to a small saucepan over medium-high heat. Bring to the boil while stirring.

Reduce the heat to low and simmer for 20 minutes, stirring occasionally. When the milk has reduced and the rice is tender add the sultanas and stir for a further 2 minutes or until all the liquid has reduced and the sultanas have plumped up.
