I have always loved muesli bars. I would go through boxes of them when I was a kid and even now can’t resist a chewy choc-chip muesli bar if it is placed in front of me. The lovely Stace (AKA Stacey Clare – A Healthy Mum) has been kind enough to share her no-bake (hooray!) chocolate muesli bar recipe. Stace is a master at making healthy food taste amazing and these are no exception. Enjoy!

No-Bake Chocolate Muesli Bars

Serves: 20 | Preparation time: 15 mins | Cooking time: 30 mins


1/2 cup unhulled tahini
2/3 cup rice malt syrup or maple syrup
125g butter
2 tbsp vanilla bean paste
1 ½ cups quinoa flakes
1 cup desiccated coconut
2 tbsp chia seeds
1 1/2 cups mixed seeds – sesame, pumpkin or sunflower
1/2 cup dark chocolate chips


STEP 1 Line a 28cm x 18cm pan with baking paper. In a small saucepan, pop the tahini, syrup, butter and vanilla bean paste and stir over a low heat until combined. Meanwhile, gently toast all remaining ingredients (except the chocolate) in a large frypan over a low heat until just browned and fragrant.

STEP 2 Stir the toasted flakes and seeds through the wet ingredients until well combined. Press the mixture into the lined pan, ensuring there are no holes. Scatter the chocolate chips on top and press them down gently.

STEP 3 Place the pan into the freezer and allow the mixture to set for half an hour. Once firm, cut into bars and enjoy. Store any remaining muesli bars in the freezer.

Stace’s tip: Quinoa flakes are a great gluten free, high protein and high fibre alternative to traditional oats. They have a slightly bitter taste so it’s wise not to skimp on the vanilla bean in this recipe.
