What could be better than biting into a ripe and juicy peach on a warm, sunny day? Biting into one that has been freshly baked with sweet honey and tangy lime with a dollop of ice cream on the side, that’s what!
My inspiration for this lime and honey peaches recipe came from my best friend who served it up to us as dessert when we visited her for dinner recently. It is so sweet and delicious and really just an easy dessert that you can whip up with very little preparation and only a handful of ingredients. The perfect dinner party dessert or just for a sweet weeknight craving.
Lime and honey peaches
2 large white peaches, cut into quarters and seeds removed
juice and rind of 1 lime
ice cream to serve
Preheat the oven to 180C.
Place the peaches in a small ovenproof baking dish.
In a small saucepan over medium heat, combine the honey, lime juice and rind. Stir for about 1 minute until combined.
Pour the honey mixture over the peaches and stir to ensure the peaches are coated in the mixture.
Place in the oven and cook for 30 minutes or until the peaches are soft and golden.
Serve with ice-cream or as is, drizzled with the honey from the pan!
