I often find that part of the trick to getting kids to eat new and different foods (or sometimes any food that isn’t white!) is to get them involved in the cooking. Sure it might be messy but if it means getting some good, wholesome food into their bellies, then it is worth it in my opinion. And getting them involved in the clean up isn’t going to hurt either!
These ham and egg pies are a popular choice in our house. I do the cutting and preparation and my toddler does the mixing, pressing and pouring (with a
little lot of help from me). I use multi-grain or wholemeal bread, but any will do. Swap the ham for some cooked bacon if you like or leave out the tomato/feta based on preference. If your kids will eat avocado you can also add some little avocado cubes into the recipe. This is an easy snack to make for after school or even a weekend breakfast option.
Ham and egg pies
12 slices of bread
2 tbsp parsely, finely chopped
100g ham, finely chopped
1 large tomato, seeds removed and finley diced
1/4 cup grated cheese
100g feta cheese, crumbled
Preheat the oven to 180°C. Grease a 12-hole muffin tray.Crack the eggs into a large mixing bowl and lightly whisk. Add the remaining ingredients (except the bread). Stir to combine.Using a round cutter, cut 12 circles from the bread. Press the bread cicles into the muffin tray. These are the base of the pies. Carefully pour the mixture into the bread bases. Place in the oven and bake for 20 minutes or until the egg mixture has set.
