Remember the days when you were child free and going out for breakfast was just a normal, leisurely weekend activity? And now, depending on the age of your kids, going out for breakfast is so not the stress free time it once was. You are lucky to get a glance of the menu let alone have a read of the paper.

So why not bring a little bit of the cafe experience into your home with this easy gourmet brekkie stack. If you have been looking for yummy breakfast ideas this one is sure to hit the mark. Send the kids out to play and whip this up in just 10 minutes. It includes lots of tasty and nutritious ingredients and is the perfect way to start the day!

Easy gourmet brekkie stack

Serves 1 (simply multiply the ingredients by the number of people you are serving)

Ingredients

1 slice sourdough bread
1 tbsp olive oil
2 slices haloumi cheese
1 medium tomato, cut in half
1/2 avocado, sliced
2 eggs
1 tbsp parsley, finely chopped
salt and pepper to taste

Method

Heat a drying pan over medium high heat and add the olive oil followed by the haloumi and tomato halves. Cook for about 1-2 minutes or until the haloumi is golden brown and the tomatoes are starting to caramelise. Flip over and cook for a further 1-2 minutes.

While the haloumi and tomatoes are cooking, crack the eggs into a bowl, add the parsley, season with salt and pepper and lightly whisk to combine.

Remove the haloumi and tomato from the pan. Pop the bread in the toaster. Pour the egg and parsley mixture into the same pan you cooked the haloumi and tomato in. Cook, stirring until the egg has cooked through. Cooking the egg in the same pan as the other ingredients gives an added level of flavour.

To assemble, place the sourdough toast in the centre of the plate. Put the scrambled eggs on the toast followed by the haloumi slices, one half of the tomato and half of the avocado slices. Sprinkle some parsley leaves on top. Serve the remaining tomato and avocado slices on the side. Drizzle with a little olive oil if you like but not essential.

Serve with a cup of tea or a babycino for the kids and breakfast is served.
