If you are like me and enjoy a bowl of ice cream after dinner, then this is the recipe for you. Stacey Clare has shared her dairy-free banana and raspberry ‘nice cream’ recipe. It is easy to make with minimal ingredients and no added nasties. Perfect for a hot summer’s day or to satisfy that sweet dessert craving!

Dairy-Free Banana and Raspberry ‘Nice Cream’

Preparation time 5 mins | Cooking time 5 mins | Serves 8

Ingredients

5 bananas, cut into slices and frozen for 2 hours
1 punnet raspberries
1/3 cup dairy-free milk of your choice (i.e. almond or soy)
1 tspn vanilla essences
50g of 70% cacao chocolate, grated

Method

STEP 1 In a blender/food processor combine the bananas, milk and vanilla bean until a creamy puree is formed. This will take just a minute or even less.

STEP 2 Add the raspberries to the food processor/blender and then pulse until they’re just combined.

STEP 3 Serve straight away with the chocolate grated on top, or if you prefer a thicker ice cream, place back in the freezer for a few hours to set.

Stace’s tip: Bananas are full of nutrients and when blended this way they resemble a thick, soft serve ice cream. The babes won’t even know they’re not eating the regular version.
