As far as easy dinners go, they don’t get much easier than this. For awhile this baked eggs recipe has been my lazy, go-to dinner for when I can’t be bothered to cook or haven’t had time to make anything else. It is healthy, easy to prepare and really tasty.

The beauty of this recipe though, is that it is flexible. You can add whatever you have on hand. My favourite combo is roasted sweet potato, baby spinach, beans, fetta, grated cheddar and ham. Some ideas to inspire your baked eggs are below:

Vegetables

roasted sweet potato/pumpkin/potato slices (peel, slice and roast in oven for 15 minutes prior to using)
leftover potato or sweet potato mash
beans
broccoli or broccolini
roasted carrot slices (as above for sweet potato)
roasted beetroot
baby spinach leaves
corn kernels
kale
avocado
eggplant
zucchini
squash

Cheese

feta
grated cheddar (this is perfect on top of the eggs)
grilled haloumi

Small goods

ham
salami
bacon (cooked)
chorizo (cooked)

Baked eggs recipe

Serves as many as you like – make it for one or make it for many

Ingredients

eggs (2 per person)
vegetables (approx 1.5-2 cups per person)
cheese (approx 1-2 tbsp per person)
diced ham or other small goods (optional)
olive oil cooking spray

Method

Preheat the oven to 200C.

You will need a 3-cup dish or ramekin per person. Lightly spray each ramekin with the olive oil spray.

Add the vegetables/cheese/small goods (whatever you are using) into the ramekin. If you want to add the grated cheddar on top rather than throughout the dish, keep this out at this stage. You can layer your ingredients or just throw them into the dish. Totally up to you! Crack the eggs on top and sprinkle with the grated cheese (if using).

Place into the oven for 10-15 minutes, or until the eggs are cooked to your liking. Season with salt & papper and serve in the dish (or serve onto a plate for kids so they don’t burn themselves).
