A few months ago hubby came home from the supermarket with a packet of pikelets and Olivia devoured them. So for the next few weeks I would pick up a packet each time I did the grocery shopping. And then I remembered how easy it is to make pikelets! Since then I have made countless batches trying to perfect my recipe. I try to add minimal sugar to my baking and use various alternatives. In this recipe, the apples add a subtle sweetness and flavour with adding any refined sugars.
Apple pikelet recipe
1 cup self-raising flour
2 pink lady apples, peeled and finely grated
1/2 cup milk
olive oil cooking spray
Sift the flour into a bowl and make a well in the centre. Add in the combined apple, milk and egg. Whisk to mix all the ingredients together.
Heat a non stick fry pan on medium-low heat. Spray a little cooking spray to grease and then drop small tablespoons of the mixture into the pan. Cook on each side for one minute or until golden brown.
There is nothing like a pikelet eaten fresh out of the pan so if you have time you can make them just before serving. However, I’m usually limited with time during the day so I will make a batch in the evening, ready for morning tea the next day (they will keep in an airtight container for 3 days or in the freezer for 6 weeks). We eat these plain but you could add a little jam or butter if you prefer.
